Pretzel Fingers in Potato Bun

This is one of my favorite schnitzel recipes! The chicken is so crispy and packs a real punch with each bite. Get ready to have your mind blown. And I don’t know if you realized yet, but I like creating different, interesting sandwiches without using bread. Because life is too short to do things that people expect. 😉

For the pretzel crumbs you can buy them already crushed, but be warned that if you do you can not control the amount of salt that is in it already. What I like doing is buying salt free pretzels, crushing them myself in a bag with a pin wheel and adding salt afterwards. I coat thick strips of chicken cutlets in flour, then egg and then pretzel crumbs. I oil the pan and the cutlets and bake on 350 for around 25 minutes flipping them halfway through, depending on how thick the fingers are. I sliced potatoes into flat ovals and coated in my own flavored oil and baked on 350 until crispy, flipping them once. (Oil mixture is canola oil, salt, pepper, everyday spice, onion powder, parsley flakes and garlic powder on both sides of the potato and I coated fries in it as well.)

The dipping sauce is really important because if you make pretzel fingers and you do not make the honey mustard sauce then you will be cursed forever and eternity. No, just kidding, you won’t be cursed, but it is basically the wrongest wrong you can do. So, let me tell you how to make the best honey mustard sauce ever! You should really thank me for this one.

  • 1.5 Tbsp mayo
  • 3 Tbsp mustard
  • 3 Tbsp honey

So simple, so delicious!

Lastly is my really easy, purple cabbage salad that goes so well with this chicken.

  • 1/4 Head of purple cabbage
  • 1 Small green apple
  • Sliced almonds

  1. 4 Tbsp white vinegar
  2. 2 Tbsp sugar
  3. Pinch of onion powder
  4. Parsley flakes
  5. Salt n pep
  6. Squirt of mustard

Slice the cabbage and green apple into thin strips and add all of the ingredients together. Mix and serve up or eat from the bowl because its delicious!
