Super Creamy Onion Soup

I have a secret ingredient. Shall I change your life and tell you about it? I really was thinking about saving this incredible soup recipe for my e-book, but I just cant wait to tell you about it and my e-book wont be coming out for a while. 



  • 5-6 Medium sweet onions 
  • 1 Zucchini
  • 1/4 Cup whole milk
  • 3-4 Tbsp Onion soup mix
  • Garlic powder, onion powder, everyday spice from Trader Joe’s, salt n pep

Peel and slice the onions thickly, like so.


Saute the onions until translucent and they will shrink in size by a whole lot. Add water until the onions are covered and add the peeled zucchini whole. When the zucchini is cooked through, remove, place in mug and blend with a hand blender. Add the zucchini mush back into the soup and that, my friends, is what gives the onion soup the ultimate creaminess ever! #mindeetip Add the milk and spices and let it cook for a half hour on low. You can cook it for longer, too. I added toasted, cheesy bread on top because it looks fancy and everyone loves that element of surprise when they first break the cheesy surface. Yassssss. Easy Cheesy Pasta

Super easy and delicious pasta recipe coming your way! Not even necessary to write up a list with this one.

Cook about 3/4 of the box of any pasta of your choice, drain and set aside. Pour one can of tomato sauce into the pan or pot and now it’s time to spice this baby up! Add 1 teaspoon of oregano, few pinches of basil and parsley, Trader Joe’s everyday spice, which is just a blend of spices, 2 tablespoons of sugar, a little salt and pepper and a splash of milk, probably 2 tablespoons or so. Mix that up and add as much cheese as your heart desires, literally there is no wrong answer here! You cannot screw this one up. I heated it up and melted all the mozzarella cheese and then added the pasta to the sauce. Mix and serve with parmesan cheese on top and viola! Perrrfecto!

Tuna Melt Towers

These. Are. Incredible. 


  • Green and yellow zucchini
  • Tuna
  • Munster cheese
  • Fried onions

I sliced some yellow and green zucchinis evenly and coated in olive oil and a lot of spices, everyday seasoning from Trader Joe’s, garlic, paprika, salt, and pepper. I baked them in the oven on 350 until crispy.  And I had to add a pic because cmon they is pretty.

While those zucchini chips get all hot and bothered, I prepare the tuna. Now, you can use canned tuna plus mayo and that would equal a mighty fine tuna, buuuut that aint really how I do things. I am too dramatic in mostly all areas! 😉 So I add chopped mild yellow pepper rings and dill pickles plus everyday seasoning, mayo, pesto and dried basil. This tuna is incredible in tuna melts! Once the zucchini chips are cooked a bit, I add shredded munster cheese on top of half of them. When they are fully cooked, I remove them from the oven and add tuna and some fried onions to the other half of the chips.


Then start building your tower, baby! This is a really fun thing to make with your kids or have at a party because they are so stinkin’ cute! If your try them let me know what you think because I love feedback from you guys! And remember, #kitchensareformesses

Mexican Cheesy Pasta

This is one of my favorite dinners to serve up because it makes everyone happy and super full. I know the pan aint fancy, but the way it looks is not as important as how it tastes. And let’s be real; this pasta will blow your mind. Oh and I’m thinking of doing a segment of “Pantry Meals” where I try to incorporate easy ingredients and things you would have on hand. Let me know what you think of that. 


  • Less than 1 box of pasta(3/4)
  • 1 Jar of marinara sauce
  • Morning star chipotle black bean crumble
  • Cheese!! (Mozzarella, Munster and Parmesan)
  • Corn (optional)

Cook the pasta and drain. Sauté the fake meat in olive oil and when mostly defrosted, add a bit of marinara sauce and corn. I used tonnelis vodka sauce because it’s the best stuff ever and I could practically drink it straight. Which I’ve never done because I’m not crazy. But it is the best pasta sauce that I keep stacked up in my pantry. 

Now that all the ingredients are ready, add the pasta to ur pan and add half of the marinara sauce and some cheese. Mix and flatten. Layer marinara sauce on top like so.

Add the delicious, flavorful, fake meat. Tip: Cook the whole package and only use half.  Save half in your fridge for tomorrow’s dinner. You can make tacos or burritos. You can really do a lot with fake meat and the best part is that it can be eaten with cheese!! #score

Now LOAD UP THAT CHEESE, BABY!! I used 3 different types because I don’t mess around when it comes to cheese. 

Bake on 350 until the cheese darkens a bit on top and take a fork and the pan and eat the entire thing. No, really don’t, but it might be extremely tempting. Enjoy and serve it with salad since the load of carbs needs something light like a salad. Or just skip the salad. Ain’t nobody got time fo dat.
