Coconut Chicken

I know what you’re thinking. Hmm, not sure if I’m going to like this one. Well, I totally feel you because I’m not a big coconut fan myself, but here I am posting about some coconut chicken, so go figure! Just try it. It’s time to try new things! Just go for it!

I coated chicken in a mixture of coconut cream, eggs and mustard. Then, I coat them in fried onions on both sides. Bake uncovered for about 25 minutes, depending on how thick your chicken is. It is so moist and so flavorful! I served it with honey mustard dipping sauce since my husband is a big chicken-ketchup fan and likes extra flavor.
